Where do our dulse flakes come from?

Our organic dulse comes from a nature reserve in northwest Brittany (France) .

What are dulse flakes?


Dulse (Palmaria palmata, also known as sea lettuce) is a red algae with a deep red color, feathery leaves and a pleasantly firm texture.

Like nori , another edible red algae from the Pacific Ocean , dulse belongs to the macroalgae – but differs in taste: dulse has a strong, slightly nutty marine taste , while nori is rather mild.

Dulse is particularly rich in iodine, iron, protein and fiber and is ideal as a natural salt substitute in the kitchen.

What do dulse flakes taste like?

Its flavor is savory and umami with a subtle nutty note. The red algae has a spicy, marine taste with a slightly salty note – ideal as a salt substitute or crunchy topping.

How do I use dulse flakes in the kitchen?

You can sprinkle them raw over salads, soups or bowls, or soak them in water and use them like vegetables.

  • Dry : Sprinkle over rice, noodle or vegetable dishes – salty, crunchy, umami.
  • Soaked : Soak in water for 5-10 minutes, rinse and enjoy in salads or soups.

DIY tip : Mix with sesame seeds to make gomasio or use in dressings.

How much iodine does dulse contain – and what should I be aware of?

Dulse is naturally very rich in iodine. Just 2 g of dulse contains approximately 200 μg of iodine , which corresponds to about 133% of the recommended daily intake for adults.

Therefore, we recommend consuming no more than 3–4 g (approx. 1 teaspoon) on 4–5 days per week .

Iodine is a vital mineral, essential for the healthy function of the thyroid gland . However, excessive intake over a prolonged period can lead to problems in sensitive individuals – for example, in cases of hyperthyroidism.

Tip: If you regularly consume other iodine-rich foods (e.g., iodized salt or seafood), you should use dulse sparingly. For healthy individuals, occasional consumption is safe and even recommended – especially for those on a low-iodine diet.
