African vegetable stir-fry with cocoa & spirulina
An extraordinary combination of savory vegetables, creamy coconut cocoa sauce and nutrient-rich spirulina – inspired by African flavors and packed with plant power.

Ingredients
🥕 Vegetables:
- 30 g spring onion
- 200 g zucchini
- 300 g carrots
- 400g cauliflower
- 1 tbsp coconut oil
- 100 ml water (for quenching)
🥣 Sauce:
- 200 ml coconut milk (min. 70%)
- 10 g cocoa powder (100%, unsweetened)
- 2 tsp peanut butter
- 10 g yacon syrup (or other sweetener)
- 2 tbsp spirulina flakes
- 2–3 tbsp soy sauce
preparation
1️⃣ Prepare the vegetables:
Clean the spring onion, zucchini, carrots and cauliflower and cut them into bite-sized pieces.
2️⃣ Sauté the vegetables:
Heat 1 tablespoon of coconut oil in a large frying pan. Sauté the vegetables in it over medium heat for about 8 minutes, until they start to brown slightly.
3️⃣ Extinguish:
Deglaze with 100 ml of water and let it simmer briefly. Set the pan aside.
4️⃣ Mix the sauce:
In a bowl, mix coconut milk, cocoa, peanut butter, yacon syrup, soy sauce and spirulina flakes until smooth.
5️⃣ Mix:
Pour the sauce over the vegetables and mix well. Season to taste.
💡 Tip:
Perfect with rice, millet, quinoa, or on its own as a flavorful bowl. Optionally topped with roasted peanuts, sesame seeds, or more spirulina flakes.
