Exotic mango and sesame salad with spirulina

Preparation time: approx. 15 minutes

Ingredients (for 2 servings)

  • ½ ripe avocado
  • 1 small bell pepper (e.g. yellow or red)
  • 1 small mango, ripe but firm
  • 100g edamame (cooked and peeled)
  • 100g chickpeas (cooked or canned, rinsed)
  • 2-3 sprigs of fresh parsley
  • Juice of ½ lemon
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp honey (or agave syrup for vegans)
  • 1 tbsp sesame seeds, toasted
  • 5 tbsp spirulina crumble

preparation

  1. Cut the mango, bell pepper and avocado into small cubes.
  2. Finely chop the parsley.
  3. Gently mix edamame, chickpeas, mango, bell pepper, avocado and parsley in a large bowl.
  4. In a small bowl, mix lemon juice, soy sauce and honey to make a dressing.
  5. Pour the dressing over the salad and gently fold it in.
  6. Finally, sprinkle with toasted sesame seeds and 5 tablespoons of spirulina crumbs.

💡Tip:
You can also serve the salad with quinoa, rice or glass noodles – perfect as a light, protein-rich main meal or side dish.
