Exotic mango and sesame salad with spirulina
Fruity mango and sesame salad with avocado, edamame, chickpeas, and spirulina crumble – a nutrient-rich, exotic mix with a fresh lemon and soy dressing. Ideal as a light main course or side dish.
Exotic mango and sesame salad with spirulina
Preparation time: approx. 15 minutes
Ingredients (for 2 servings)
- ½ ripe avocado
- 1 small bell pepper (e.g. yellow or red)
- 1 small mango, ripe but firm
- 100g edamame (cooked and peeled)
- 100g chickpeas (cooked or canned, rinsed)
- 2-3 sprigs of fresh parsley
- Juice of ½ lemon
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp honey (or agave syrup for vegans)
- 1 tbsp sesame seeds, toasted
- 5 tbsp spirulina crumble
preparation
- Cut the mango, bell pepper and avocado into small cubes.
- Finely chop the parsley.
- Gently mix edamame, chickpeas, mango, bell pepper, avocado and parsley in a large bowl.
- In a small bowl, mix lemon juice, soy sauce and honey to make a dressing.
- Pour the dressing over the salad and gently fold it in.
- Finally, sprinkle with toasted sesame seeds and 5 tablespoons of spirulina crumbs.
💡Tip:
You can also serve the salad with quinoa, rice or glass noodles – perfect as a light, protein-rich main meal or side dish.
