Cucumber salad with roasted sesame seeds, spirulina & dulse
Preparation time: approx. 10–12 minutes
Ingredients (for 2 servings)
- 2 cucumbers
- 1 bunch of parsley
- 100 g sesame seeds (unhulled)
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice or apple cider vinegar
- 1 tbsp dulse powder
- 1–2 tablespoons of spirulina flakes

Roast sesame seeds
Toast sesame seeds in a dry pan over medium heat until golden brown, stirring regularly. Then let them cool completely. -
Prepare the parsley
Wash the parsley, dry it well, chop it coarsely or finely (according to taste) and put it in a large salad bowl. -
Prepare cucumbers
Wash the cucumbers and cut them into thick slices. Lightly crush the slices with a glass or a wide knife so that they break open slightly. Add them to the parsley in the bowl. -
Mix the dressing
Mix soy sauce, sesame oil, vinegar, dulse powder and spirulina flakes well in a small bowl. -
Mix everything together
Pour the dressing over the cucumbers and parsley, add the toasted sesame seeds, and mix thoroughly. Let it sit briefly and enjoy immediately.
💡Tip:
This salad tastes especially good with rice dishes, grilled vegetables, or as a fresh contrast to savory bowls. If you prefer it milder, start with less soy sauce and spirulina and gradually add more to find your preferred amount.
