Bright vitality rolls with spirulina sprinkles

Colorful, fresh, and bursting with energy – these raw vegetable rolls combine crunchy vegetables, aromatic spices, and the superfood power of spirulina. A vibrant, nutrient-rich finger food for any occasion!

🕒 Preparation time:

  • approximately 30 minutes

Ingredients (for approx. 6 rolls)

  • 250 g carrots
  • 250 g beetroot
  • 250g broccoli
  • 10 g fresh turmeric
  • 10 g fresh ginger
  • 10 g garlic
  • ½ tsp salt
  • 1 handful of walnuts
  • 100 ml water
  • Rice paper (approx. 6 sheets)
  • Spirulina crumbles for sprinkling

preparation

1️⃣ Prepare the vegetables:
Roughly chop carrots, beetroot and broccoli, finely chop them in a food processor and place them in a large bowl.

2️⃣ Mix the seasoning paste:
Blend turmeric, ginger, garlic, salt, walnuts and water in a blender until creamy.

3️⃣ Mix:
Thoroughly mix the seasoning paste into the chopped vegetables until everything is evenly blended.

4️⃣ Prepare the rice paper:
Dip each sheet of rice paper into lukewarm water and soak briefly until it becomes soft and pliable.

5️⃣ Form rolls:
Place the rice paper on a damp board, add 2-3 tablespoons of the vegetable mixture, sprinkle with spirulina crumbs and tightly roll up.

💚Tip:
Tastes great on its own, with a light peanut or lime dip – perfect as a snack, appetizer or light summer dish!
