Vegetable wraps with spirulina flakes

Ingredients

  • 2 tbsp coconut oil (for frying)
  • 1 large wrap (whole wheat, spelt or gluten-free)
  • 2 tbsp hummus
  • 1 small handful of leafy salad
  • 1 small handful of sprouts
  • ¼ bell pepper (cut into thin strips)
  • 2–3 cherry tomatoes (halved)
  • ½ small carrot (finely grated)
  • ¼ cup white cabbage (finely shredded)
  • 50g vegan meat (e.g. tempeh, soy strips or seitan, fried)
  • 1 tsp spirulina flakes (for sprinkling)

Instructions

  1. Fry vegan meat in a pan with coconut oil for about 4-5 minutes until golden brown and season to taste.
  2. Briefly warm the wrap in a pan without oil or in the oven until it is soft and easy to roll.
  3. Spread the hummus evenly on the wrap, leaving some space at the edges.
  4. Top with lettuce, sprouts, peppers, tomatoes, carrots and white cabbage.
  5. Spread the fried vegan meat on top and sprinkle with spirulina flakes.
  6. Roll the wrap up tightly, folding in the sides slightly. If desired, cut it in diagonally and serve.

Tip

Ideal for on the go – simply wrap in baking paper or beeswax wrap and take it with you!
