Kitchari – Ayurveda

Kitchari – Ayurvedic Recipe

Ingredients

  • Rice (optional)
  • 150g mung dal or red lentils
  • 3 times the amount of water
  • Spinach (or other vegetables of your choice)
  • A pinch of garam masala (spices of your choice)
  • Pinch of cumin (spices of your choice)
  • Pinch of cardamom (spices of your choice)
  • olive oil
  • 1 tsp spirulina flakes (topping)

Instructions

  1. Wash the rice and mung dal thoroughly.
  2. Heat some oil in a pot and briefly toast the spices over low heat.
  3. Add rice, mung dal and water and bring to a boil.
  4. Simmer for about 5 minutes with the lid open, stirring occasionally.
  5. Add spinach and optionally stir in a splash of soy or oat cream for a creamy consistency.
  6. Continue simmering everything over low heat for about 20 minutes, until the rice and lentils are soft.
  7. Sprinkle with spirulina flakes and serve.

Notes
