Kitchari – Ayurvedic Recipe
Ingredients
- Rice (optional)
- 150g mung dal or red lentils
- 3 times the amount of water
- Spinach (or other vegetables of your choice)
- A pinch of garam masala (spices of your choice)
- Pinch of cumin (spices of your choice)
- Pinch of cardamom (spices of your choice)
- olive oil
- 1 tsp spirulina flakes (topping)
Instructions
- Wash the rice and mung dal thoroughly.
- Heat some oil in a pot and briefly toast the spices over low heat.
- Add rice, mung dal and water and bring to a boil.
- Simmer for about 5 minutes with the lid open, stirring occasionally.
- Add spinach and optionally stir in a splash of soy or oat cream for a creamy consistency.
- Continue simmering everything over low heat for about 20 minutes, until the rice and lentils are soft.
- Sprinkle with spirulina flakes and serve.
