Blue chia pudding with spirulina flakes

Ingredients

pudding

  • approx. 3 tbsp chia seeds
  • 200 ml plant milk
  • ½ ripe banana
  • 50 g blueberries
  • 50g mango
  • 100 ml water (as needed for mixing)
  • ½ tsp blue spirulina powder

Topping

  • ½ banana (sliced)
  • 4 plums (cut into quarters)
  • 2 tbsp wild blueberries
  • 1 tbsp spirulina crumble

Instructions

  1. Pour plant-based milk into a bowl, add chia seeds and stir. Allow sufficient time for soaking.
  2. Blend blueberries, mango, ½ banana, water and spirulina powder in a blender until creamy.
  3. Pour the blue mixture into a bowl, add the chia pudding and create a pattern.
  4. Garnish with plum wedges, banana slices, wild blueberries and spirulina crumble before serving.

Tip

For extra creaminess, briefly mix the chia mixture again after soaking or stir in some yogurt (e.g. coconut yogurt).
