Bowl with cashew-rocket-spirulina dressing

Ingredients

dressing

  • 80 g arugula (washed)
  • 120g cashews (soaked for at least 2 hours)
  • 4 tablespoons olive oil
  • 2–3 tablespoons lime juice
  • 2 cloves of garlic
  • 3 tbsp spirulina flakes
  • Salt and pepper to taste

Vegetable and potato bowl

  • potatoes
  • arugula
  • tomatoes
  • Protein source of choice

Instructions

  1. Prepare vegetables as desired.
  2. For the dressing, drain the cashews and blend them with the remaining ingredients until creamy. Add a little water if needed until the desired consistency is reached.
  3. Place the vegetables and potatoes in a bowl, drizzle with the dressing and enjoy.
