Ingredients

- 80 g arugula (washed)
- 120g cashews (soaked for at least 2 hours)
- 4 tablespoons olive oil
- 2–3 tablespoons lime juice
- 2 cloves of garlic
- 3 tbsp spirulina flakes
- Salt and pepper to taste
Vegetable and potato bowl
- potatoes
- arugula
- tomatoes
- Protein source of choice
Instructions
- Prepare vegetables as desired.
- For the dressing, drain the cashews and blend them with the remaining ingredients until creamy. Add a little water if needed until the desired consistency is reached.
- Place the vegetables and potatoes in a bowl, drizzle with the dressing and enjoy.
