Ingredients
lettuce
- 2 handfuls of arugula
- 1 red bell pepper (diced)
- ½ cucumber (sliced)
- 8–10 cherry tomatoes (halved)
- ½ mango (diced)
- 2 tbsp pine nuts (roasted)
dressing
- 2 handfuls of fresh wild garlic
- 3–4 tablespoons of hemp seeds (hulled)
- 1 clove of garlic
- approx. 150 ml water
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp salt
- A little freshly ground pepper
- 2 tsp spirulina powder
Instructions
- Wash all the salad ingredients, cut them into pieces, and place them in a bowl. Sprinkle with the toasted pine nuts.
- Roughly chop the wild garlic, peel the garlic and mix with the remaining dressing ingredients to create a creamy sauce.
- Pour the green dressing over the salad and mix well.
Tip
💡 For extra freshness, add a few squeezes of lime juice or fresh mint. It's also perfect as a light lunch or side dish for barbecues!
