Ingredients

lettuce

  • 2 handfuls of arugula
  • 1 red bell pepper (diced)
  • ½ cucumber (sliced)
  • 8–10 cherry tomatoes (halved)
  • ½ mango (diced)
  • 2 tbsp pine nuts (roasted)

dressing

  • 2 handfuls of fresh wild garlic
  • 3–4 tablespoons of hemp seeds (hulled)
  • 1 clove of garlic
  • approx. 150 ml water
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • A little freshly ground pepper
  • 2 tsp spirulina powder

Instructions

  1. Wash all the salad ingredients, cut them into pieces, and place them in a bowl. Sprinkle with the toasted pine nuts.
  2. Roughly chop the wild garlic, peel the garlic and mix with the remaining dressing ingredients to create a creamy sauce.
  3. Pour the green dressing over the salad and mix well.

Tip

💡 For extra freshness, add a few squeezes of lime juice or fresh mint. It's also perfect as a light lunch or side dish for barbecues!
