Oat and banana cookies with chocolate chips and spirulina

Ingredients

  • 2 ripe bananas
  • 120 g delicate rolled oats
  • 1 egg (optional, can be omitted)
  • 1 tsp cinnamon
  • 20 g coconut chips
  • 40g chocolate drops or chocolate cut into small pieces
  • 3 tbsp spirulina crumble

Instructions

  1. Preheat oven to 180 °C (top/bottom heat).
  2. Mash the bananas well in a bowl using a fork.
  3. Optionally add the egg and mix well.
  4. Stir in the rolled oats, cinnamon, coconut chips and chocolate drops until a moist, malleable dough is formed.
  5. Using a spoon, place small mounds onto a baking sheet lined with parchment paper and flatten them slightly.
  6. Bake the cookies for 15–18 minutes, until they are lightly golden brown.
  7. Let it cool and enjoy.

Tip

These cookies are super easy to prepare and are a perfect snack for on the go or with coffee!
