Overnight oats with spirulina flakes & mango

Preparation time: approx. 5 minutes
Soaking time: at least 4 hours (preferably overnight)

Ingredients (for 1 serving)

  • 50 g rolled oats (quick or coarse)
  • 150 ml plant-based milk (e.g. oat, almond or coconut milk)
  • ½ ripe banana (mashed)
  • ½ ripe mango (diced)
  • 1 tsp spirulina flakes
  • 1 tbsp almond butter
  • 1 tbsp dried mulberries (or other dried fruit)
  • Optional: 1 tsp maple syrup or agave nectar for extra sweetness

preparation

  1. In a glass or bowl, thoroughly mix rolled oats, mashed banana, plant-based milk and spirulina flakes.
  2. Mix in the mango and mulberries.
  3. Top with a spoonful of almond butter (or stir it in).
  4. Cover and let it soak overnight in the refrigerator.
  5. The next morning, stir well and garnish with fresh mango, more almond butter or nuts, if desired.

💡Tip:
For an extra creamy consistency, you can stir the mixture well again in the morning or briefly blend it. Also ideal for meal prep!
