Spirulina blinis with beetroot and horseradish cream

Ingredients

For the blinis

  • Buckwheat flour
  • Spelt flour type 630
  • Water
  • Salt
  • baking powder
  • Apple cider vinegar

For the beetroot and horseradish cream

  • Beetroot
  • Vegan quark or cream cheese
  • horseradish
  • Lemon juice
  • Salt, pepper
  • Spirulina granules or flakes
  • Apple
  • purslane or rocket

Instructions

  1. Combine all ingredients for the blinis to form a smooth batter.
  2. Heat a little olive oil in a pan, add about 1 tablespoon of batter per blini and cook over medium heat for about 3 minutes per side.
  3. For the cream, purée the beetroot with the remaining ingredients and season with salt and pepper.
  4. Spread the blinis with the cream, top with an apple slice and sprinkle with spirulina. Alternatively, use ready-made beetroot and horseradish spread.
  5. Arrange on a bed of salad (e.g. purslane or rocket).
