Spirulina blinis with beetroot and horseradish cream

Ingredients
For the blinis
- Buckwheat flour
- Spelt flour type 630
- Water
- Salt
- baking powder
- Apple cider vinegar
For the beetroot and horseradish cream
- Beetroot
- Vegan quark or cream cheese
- horseradish
- Lemon juice
- Salt, pepper
- Spirulina granules or flakes
- Apple
- purslane or rocket
Instructions
- Combine all ingredients for the blinis to form a smooth batter.
- Heat a little olive oil in a pan, add about 1 tablespoon of batter per blini and cook over medium heat for about 3 minutes per side.
- For the cream, purée the beetroot with the remaining ingredients and season with salt and pepper.
- Spread the blinis with the cream, top with an apple slice and sprinkle with spirulina. Alternatively, use ready-made beetroot and horseradish spread.
- Arrange on a bed of salad (e.g. purslane or rocket).
