Spirulina lentil spread

This spirulina spread is the perfect nutrient-rich topping for your favorite bread. Thanks to the lentils, it's also an ideal source of protein.

Ingredients

  • 10 g spirulina flakes
  • 150g red lentils or yellow lentils
  • 1–2 shallots
  • 1 tbsp olive oil
  • 0.5 tsp turmeric
  • 1 tsp Madras curry
  • 0.5 lemon
  • 1 pinch of salt
  • 1 pinch of pepper

Instructions

  1. Cook the red lentils in a pot with approximately twice the amount of water over medium heat until soft (about 15 minutes). Finally, drain off any excess water.
  2. Meanwhile, finely chop the shallots.
  3. Combine all ingredients in a bowl and mix with a spoon – no mixing required.

Tips

The spices can be adjusted to taste, for example with paprika or chili. Yellow lentils can also be used instead of red lentils, as they have a similar cooking time. Larger lentils will take longer to cook, so it is recommended to soak them beforehand.
