Sweet Spirulina Mousse

Ingredients
- 150 ml aquafaba (chickpea water)
- 1 level teaspoon of locust bean gum
- 1 tbsp fresh lemon juice
- 3 tsp spirulina powder
- 25 g coconut butter
- 3 tablespoons maple syrup (to taste)
- 2 tsp spirulina flakes
Instructions
- Mix coconut butter, maple syrup and spirulina powder over a water bath to form a green, liquid cream.
- Let the cream cool down slightly.
- Beat aquafaba, lemon juice and locust bean gum with a mixer until stiff.
- Gently fold the spirulina-coconut cream into the stiffly beaten aquafaba (for extra fluffy consistency) or mix in with a mixer.
- Fill the mousse into dessert bowls and chill in the refrigerator for at least 30 minutes.
- Garnish with spirulina flakes before serving.
