Süße Spirulina Mousse

Sweet Spirulina Mousse

Ingredients

  • 150 ml aquafaba (chickpea water)
  • 1 level teaspoon of locust bean gum
  • 1 tbsp fresh lemon juice
  • 3 tsp spirulina powder
  • 25 g coconut butter
  • 3 tablespoons maple syrup (to taste)
  • 2 tsp spirulina flakes

Instructions

  1. Mix coconut butter, maple syrup and spirulina powder over a water bath to form a green, liquid cream.
  2. Let the cream cool down slightly.
  3. Beat aquafaba, lemon juice and locust bean gum with a mixer until stiff.
  4. Gently fold the spirulina-coconut cream into the stiffly beaten aquafaba (for extra fluffy consistency) or mix in with a mixer.
  5. Fill the mousse into dessert bowls and chill in the refrigerator for at least 30 minutes.
  6. Garnish with spirulina flakes before serving.
