Vegan Chocolate Mousse

Ingredients
- 400 g silken tofu
- 150g dark chocolate (or other vegan chocolate)
- 2 spoonfuls of Joy Potion
Topping
- Pureed strawberries
- mint
Instructions
- Melt dark chocolate in a water bath.
- Place melted chocolate, silken tofu, and Joy Potion into a tall container and blend with an immersion blender until creamy.
- Pour the cream into glasses and chill for a few hours.
- Garnish with pureed strawberries and mint before serving.
Notes
The toppings can be varied as desired, for example with coconut flakes or chopped nuts. The mousse is also delicious on its own. The strawberries can be harvested seasonally and frozen for later use.
